Grilled trout with bacon and almond flakes

Serves: 4

Recipe Ingredients
4 rainbow trout fillets;
juice of half a lemon;
50g flaked almonds;
110g unsmoked streaky bacon, trimmed of fat and chopped;
50g butter, plus extra for greasing;
1 tbsp freshly chopped parsley
 
Recipe Method
Line a grill pan with foil and butter it. Put the trout fillets on skin side down. Sprinkle the lemon juice over and season with salt and pepper. Grill for about 10 minutes.

Meanwhile dry-fry the almonds until evenly browned and set aside.
Add the bacon to the frying pan and cook until cooked through. Then add the butter, almonds and parsley and stir until the butter has melted. Spoon the butter mixture over the trout fillets and serve at once.
