Tagliatelle with broccoli and garlic crumbs

Serves: 4

Recipe Ingredients
335g dried tagliatelle;
275g broccoli, chopped into small florets;
1 red chilli, deseeded and chopped;
75g white breadcrumbs;
2 cloves garlic, peeled and chopped;
3 tbsp olive oil;
50g butter;
2 tbsp chopped fresh parsley;
grated parmesan to serve.
 
Recipe Method
Gently melt the butter in a frying pan and stir-fry the garlic, chilli and breadcrumbs for 8 minutes.

Meanwhile cook the pasta for 5 minutes in boiling water then add the broccoli florets to the water and cook together for a further 3 minutes. Drain and return to the pan along with the breadcrumb mixture, olive oil and parsley. Toss and serve with freshly grated parmesan on the top.
