Tagliatelle with lemon chicken and courgettes

Serves: 4

Recipe Ingredients
2 chicken breasts, cut into strips,
2 medium courgettes, sliced,
300g tagliatelle,
rind and juice of 1 lemon,
200ml creme fraiche,
2 tbsp sunflower oil,
salt and pepper.
 
Recipe Method
Heat the oil in a large pan and gently cook the chicken and courgettes for about 10 mins until cooked through. At the same time cook the tagliatelle in a separate pot.

To the chicken and courgettes stir in the lemon juice and rind and the creme fraiche. Season to taste.

Mix through the pasta and serve straight away.
