Tagliatelle with lemon chicken and courgettesby Susan James
|Preperation time: 10 mins
Cooking time: 12 mins
|2 chicken breasts, cut into strips,
2 medium courgettes, sliced,
rind and juice of 1 lemon,
200ml creme fraiche,
2 tbsp sunflower oil,
salt and pepper.
|Heat the oil in a large pan and gently cook the
chicken and courgettes for about 10 mins until cooked through. At
the same time cook the tagliatelle in a separate pot.
To the chicken and courgettes stir in the lemon juice and rind and the creme fraiche. Season to taste.
Mix through the pasta and serve straight away.
