| Recipe Ingredients |
| 450g Cumberland sausages; 335g dried penne rigate; 335g red onions, peeled and quartered; 800g tinned chopped tomatoes with chilli; 2 cloves garlic, peeled and crushed; 1 tbsp tomato puree; 1 tsp sugar; olive oil; salt and pepper; basil leaves to garnish. |
| Recipe Method |
| Heat some oil and cook the garlic for a couple
of minutes. Add the tomatoes, tomato puree, sugar and season with
salt and pepper. Leave to simmer, uncovered, for 25 minutes. Meanwhile make the meatballs. Simply slit the sausages from top to bottom and peel of the skin. Break each of the sausages in half and roll each piece into a ball shape. Heat some more oil in a frying pan and cook the meatballs for about 10 minutes until cooked through. Set aside. Add the onions to the frying pan and fry for 10 minutes, set aside with the meat balls. Cook the pasta in boiling water as according to the instructions. Drain and return to the saucepan. Add the tomato sauce and meatballs and red onions, and heat through. Serve garnished with fresh basil leaves. |
