Fennel and orange salad

Recipe Ingredients
2 fennel bulbs, sliced and leaves kept to garnish;
4 oranges, peeled and sliced finely;
1/2 red onion, sliced into thin rings;
4 tbsp red wine vinegar;
4 tbsp olive oil;
2 tsp fennel seeds
 
Recipe Method
Put the onion, orange, fennel and fennel seeds in a bowl and mix. Scatter the fennel leaves on top and season with a little salt. Pour the oil and vinegar over the mixture and toss.
