| 1.4kg chicken; 1 tbsp olive oil; 200ml dry white wine; 200ml hot vegetable stock; 1 lemon, quartered; 1 onion, quartered; handful of lemon thyme sprigs; |
| Recipe Method |
| Put the chicken in a large bowl and add the
olive oil and white wine. Squeeze out some of the juice from the
lemons over the chicken and then add the lemon quarters to the
bowl. Add the onion and thyme. Mix, cover and marinate in the
fridge overnight. Put the chicken in a roasting tin and then add the remaining marinade to the roasting tin. Season and add the hot vegetable stock. Roast the chicken in the oven for about an hour and a half until cooked through. |
