Spicy prawn and chorizo paella

Serves: 4

Recipe Ingredients
200g cooked whole prawns;
225g chorizo, diced;
200g basmati rice;
1 onion, chopped;
1 green pepper, deseeded and chopped;
2 cloves garlic, crushed;
12 cherry tomatoes, halved;
500ml chicken or fish stock;
flat-leaf parsley to serve
 
Recipe Method
In a deep frying pan fry the chorizo without any oil for 2 minutes. Add the green pepper and onion and cook for 5 minutes. Add the garlic and stir in the rice. Add the stock and tomatoes. Bring to the boil and cover. Simmer gently for 15 minutes.

Add the prawns and heat through for 4 minutes until the prawns are hot. Scatter the parsley on top to serve.
