|200g can sweetcorn, drained;
1 tsp dried sage;
450g sweet potatoes, cooked and mashed;
4 spring onions, finely chopped;
150g fresh white breadcrumbs;
2 tbsp plain flour;
2 tbsp vegetable oil
|Once the sweet potato mash is cool, add the
spring onions, sage, sweetcorn and breadcrumbs. Mix together to
form a firm mixture. Season.
Divide the mixture into 12 and form flat cakes. Lightly dust with flour.
Heat the oil in a frying pan and cook the cakes in batches for 2-3 minutes each side until golden. Drain and allow to cool then chill overnight.
