Basic pasta dough

Recipe Ingredients
400g pasta flour or strong white flour;
4 large eggs;
1 tbsp olive oil
 
Recipe Method
Clean an area of worktop and make sure it is dry. Sift the flour onto the worktop in a small heap. Make a well in the centre and add the eggs and oil.

Slowly, using one hand, blend together to form a stiff dough.

Knead for about 15 minutes until dough is smooth. Wrap in clingfilm and store in a cool place for about 1 hour before use.

(use to make ravioli, or cut into thin ribbons to make tagliatelle, cook for about 5 minutes in boiling water)
