Lentil soup

Serves: 4

Recipe Ingredients
250g red lentils;
2 large carrots, chopped;
1 large onion, chopped;
2 pints vegetable stock;
olive oil
 
Recipe Method
Soak the red lentils in cold water for 30 mins before cooking.

Heat the oil and gently soften the onion and carrot.

Add the stock and lentils. Season and bring to the boil. Simmer gently for 1 hour 30 mins.
