| 605g chicken thigh fillets; 2 tsp Cajun seasoning; 1 red pepper, roughly chopped; 1 green pepper, roughly chopped; 400g can chopped tomatoes; 1 red chilli, finely chopped; 175g frozen sweetcorn; salt and pepper; oil for frying; long grain rice to serve |
| Recipe Method |
| Heat the oil in a flameproof casserole dish.
Season the chicken thighs with the cajun spice and brown one side
in the hot oil for about 3 minutes. Turn the thighs over and add
the peppers and chilli, cook for two minutes. Add the tomatoes and season with salt and pepper. Bring to a simmer. Cover and cook for 20 minutes on a gentle heat, stirring occasionally. Add the sweetcorn 5 minutes before the end of cooking time. Serve with rice. |
