| 660g chicken quarters; 1 onion, cut into wedges; 2 tbsp Madras curry paste; 50g cashew nuts; 3 tbsp double cream; 15g chopped fresh coriander; 2 tbsp olive oil; cooked rice to serve. |
| Recipe Method |
| Using a heavy-based roasting tin suitable for on
the hob, heat the oil and fry the chicken, skin side down, for 4
minutes until golden. Turn over and add the onion and fry for 5
minutes. Add the curry paste, cashew nuts, and 300ml of water. Season. Cover the roasting tin with foil and bake in the oven (190c/ gas5) for 30 minutes. Take the foil off and return to the oven for a further 10 minutes. Remove from the oven and stir in the cream and fresh coriander. Serve with cooked rice. |
