Coconut prawns

Recipe Ingredients
200g frozen prawns, thawed;
100g creamed coconut, grated;
1 red pepper, deseeded and cut into strips;
3 spring onions, trimmed and shredded;
large piece of fresh root ginger, peeled and sliced into sticks;
1 tbsp sunflower oil;
salt an pepper.
 
Recipe Method
heat the oil in a pan and gently cook the red pepper and ginger for 4 minutes.

Meanwhile, mix the coconut with 200ml hot water. Add this to the pan and bring to the boil. Simmer for 5 minutes.

Add the prawns and warm through. Season. Add the spring onions and cook for a futher minute. Serve straight away.
