Tuna panzanella

Recipe Ingredients
185g can tuna chunks in brine, drained;
2 thick slices day-old bread, crusts removed and cut into cubes;
8 cherry tomatoes, halved;
1 red onion, thinly sliced;
quarter cucumber, diced;
3 tbsp olive oil;
1 tbsp red wine vinegar;
freshly ground black pepper;
handful of fresh basil leaves torn.
 
Recipe Method
Put the bread cubes in a large salad bowl and sprinkle with a little cold water just to slightly moisten the bread.

Add the tomatoes, cucumber and onion. Mix through and then add the tuna.

Into a jar with a screw-top lid put the oil, red wine vinegar and season with black pepper. Shake well and drizzle over the salad. Add the basil leaves and toss together. Serve immediately.
