| tagliatelle pasta for 4; 120g pancetta; 1 tbsp olive oil; 4 egg yolks; 6 tbsp single cream; 50g parmesan, grated; black pepper. |
| Recipe Method |
| Cook the tagliatelle in boiling water as per
pack instructions. Meanwhile, in a pan heat the oil and fry the pancetta until lightly browned. Put the egg yolks in a bowl with the cream and half the parmesan. Whisk. Season with black pepper. Drain the pasta and add it to the pan with the pancetta. Pour in the egg mixture and stir quickly. Serve immediately with the remaining parmesan sprinkled on top. |
