Mussels with parmesan and herb crust

Serves: 4

Recipe Ingredients
20 large cooked green-lipped mussels in half shells;
25g freshly grated parmesan;
50g butter;
1 garlic clove, crushed;
25g fresh white bread crumbs;
1 tbsp chopped fresh chives;
1 tbsp chopped fresh parsley;
black pepper.
 
Recipe Method
Slightly loosen the mussels from their shells and arrange them in a shallow heatproof dish in a single layer.

In a bowl mix together the butter, garlic, chopped chives and parsley and season with the pepper. In another bowl mix together the breadcrumbs and parmesan.

Put a small knob of the herb butter on each of the mussels and put under a hot grill until the butter is melted.

Sprinkle each with the parmesan breadcrumbs and put back under the grill for 2 minutes until golden.
