Chicken and Parma Ham in a White Wine Sauce

Serves: 2

Recipe Ingredients
1) 2 Chicken Breasts
2) 2 Slices of Parma Ham
3) Large Glass of white wine
4) Olive oil or butter
 
Recipe Method
Place a good sized length of cling-film on the work top and place the chicken on top giving each piece enough room to spread. Place another piece of cling film on top.

Take a rolling pin and flaten out each piece of chicken until its 1.5-2.5cm thick.

Place parma ham on work top and then place the chicken on top of the parma ham.

Roll up each piece of chicken and parma ham.

If you have it avaliable a bit of string to keep the chicken rolled up might be handy if not no matter as I've never done it and I've done this recipe loads of times.

You now need to fry the chicken in the frying pan with the butter or olive oil (I use olive oil because I am not a butter person). The pan needs to be on a medium heat, and fry until golden.

Now pour in the white wine, cover and simmer for 10-15 minutes or until the white wine has a syrup like consistancy. This should be 10 minutes if you have the simmer temperature right.

Serve with pasta or what ever you like!
